Pico de Gallo

Preparation: 10 minutes

Additional time (to let sit): 1 hour

Total time: 1 hour 10 minutes

Servings: 12

Ingredients:

2 cups Roma tomatoes

1/2 cup cilantro

1 jalapeno (or 2 depending on desired amount of spice)

1/2 cup red onion

2 teaspoons lime juice

Salt (to taste)

Preparation:

Chop tomatoes, onion, jalapeno, cilantro and add to a mixing bowl

Add lime juice and salt

Let sit for one hour (but can be served right away if time doesn’t permit)
