This Healthy Granola Recipe Will Power Up Your Morning

Breakfast truly is the most important meal of the day. It is the foundation for generating energy and gets us out of the gate strong for a more productive day. But mornings can be busy and, often, eating breakfast is the last thing on our minds. Try out this easy and healthy granola recipe to power up your morning…

HOMEMADE GRANOLA 

Granola is a staple in our home. Chris and I love to add it to natural, Greek yogurt as a quick and healthy breakfast option. Homemade granola is very easy to make. Whip up a batch on Sunday and you’ll have the leftovers all week long.

Yields about 4 cups

Prep time: 10 minutes

Cook time: 20 minutes 

Ingredients:

⚓️ 3 cups old-fashioned oats (or rolled oats). If you have a gluten intolerance, you can buy a “GF” brand.

⚓️ 1 cup nuts: Based on your preference but almonds are a healthy and yummy option

⚓️ 1/2 cup coconut oil (melted)

⚓️ 1/2 cup organic honey or maple syrup

⚓️ 1/2 teaspoon vanilla extract

⚓️ 1/2 teaspoon cinnamon (ground)

⚓️ 1/2 cup dried cranberries (or fruit of your choice- i.e. raisins, bananas, etc).

Preparation:

Mix all of the dry ingredients (oats, nuts, dried fruit, and cinnamon) together in a large bowl.

Mix together the wet ingredients (coconut oil, honey or maple syrup, and vanilla extract).

Add the mixtures together and mix evenly.

Spread evenly onto a baking sheet and bake for 20 minutes at 350 degrees. Let cool.

Garnish with additional fresh fruit and Greek yogurt and have a great start to your day!
