Grilled Chicken with Arugula, Fresh Peaches, Blueberries and Feta

Freshly sliced peaches

This recipe is one of our favorites! Nothing beats arugula with fresh blueberries, fresh peaches and good quality feta cheese with grilled chicken. It’s the perfect light meal for any occasion that’s both easy and delicious. It’s especially tasty when paired with a good champagne or sauvignon blanc. For a touch of added flavor, our recipe includes a locally grown honey. It take just 30 minutes to prepare and this recipe serves four. Enjoy!

For the salad:

  • 1 pkg Baby Arugula
  • 1 oz. Feta Cheese
  • 1 Red Onion
  • 1/2 cup fresh blueberries
  • 3 ripe peaches

For the dressing: 

  • 5 tablespoons olive oil
  • 2 tablespoon balsamic vinegar
  • 1/2 teaspoon honey
  • Salt, pepper to taste

Chicken:

  • 1 pound of chicken breast, thin sliced
  • olive oil
  • salt and pepper

Instructions:

  1. Make the dressing. In a small bowl, whisk together olive oil, vinegar, honey, salt and pepper – easy!
  2. Heat the Grill. If you do not have a grill, use a grill pan like this.
  3. Brush the chicken with olive oil and a dash of salt and pepper. Brush again with dressing.
  4. Grill the chicken, until cooked. Set aside.
  5. In a large salad bow, toss the the arugula, sliced peaches, sliced onion, berries and fresh feta cheese with the dressing.
  6. Arrange the salad on plates and add chicken on top.
