You had a fun, wonderful and safe holiday yesterday. Today you’re putting away baskets, picking up plastic eggs, and wondering what on earth you’re going to do with all that ham! You tried to give it away but there is still so much leftover. Don’t worry! We’ve got you covered with three great recipes to enjoy this week…
Ham Tetrazzini
Growing up, my mother used to make Tetrazzini with the leftover turkey from Thanksgiving. Although I was disappointed the holiday was over and my cousins had gone home, I looked forward to having this incredible meal. Come to find out, the recipe works just as well with ham!
Total Cook time: 20 minutes (10 minutes of prep)
Servings: 4
Ingredients:
1 1/2 cups diced ham
1 can cream of mushroom soup
1/2 cup milk
1 cup cooked peas
8 ounces pasta (I prefer angel hair)
2 tablespoons butter
1/2 medium onion, diced
6 ounces mushrooms, sliced
1/2 teaspoon pepper
1 cup peas (cooked)
1 cup shredded cheddar cheese and Parmesan cheese
Preparation:
Split Pea with Ham Soup
Easily a favorite a favorite of mine, this soup is delicious and easy to make. Make more than enough and freeze what’s left for a future dinner!
Total cook time: 3 hours (20 minutes of prep)
Servings: 8
Ingredients:
2 cups (or 1 pound) of rinsed split peas
1 chopped onion
1 ham bone
1 1/2 cup of chopped ham
3 carrots (or 1 1/2 cups) cut into small pieces
1/4 teaspoon of pepper
8 cups of water
Preparation:
Bring water and peas to a boil for 2 minutes (uncovered)
Let stand 1 hour
Add onion, pepper and ham bone and bring to a boil
Reduce heat, cover, and simmer for 1 hour (or until peas are soft)
Remove ham bone and add chopped ham
Stir in carrots and heat to a boil then cover
Simmer until carrots are soft
Garnish with parsley and/or thinly sliced pieces of ham
Note: Frozen soup will keep for 3 months.
Ham and Cheese Quiche
Enjoy this easy quiche recipe for breakfast or dinner. Add extra vegetables based on your preference and serve heated or right out of the refrigerator!
Total cook time: 30 minutes (10 minutes of prep)
Servings: 8
Ingredients:
1 1/2 chopped ham
1 cup shredded swiss cheese
1 cup shredded cheddar cheese
1 frozen pie crust
4 eggs (beaten)
1/4 cup half and half
1 1/2 cup of preferred vegetables (carrots, onion, green peppers, etc.)
1 tablespoon butter
1/4 teaspoon salt
1/4 teaspoon pepper
Preparation:
Preheat oven to 375
Add butter and vegetables to a medium saucepan and cook until soft
Whisk eggs, half and half, salt and pepper in a large bowl
Add ham and cheese to the mixture
Add cooked vegetables
Pour mixture into the pie crust
Bake for 40 minutes (or until top is browned)
Enjoy a slice of quiche all week long!
