There’s nothing quite like a hot bowl of chicken soup in the middle of winter.
For those of us that appreciate chicken soup with a bit of zip, this is a must-try recipe. In fact, once you’ve tried this ULTIMATE version of chicken soup complete with fresh lime, cilantro, avocado and jalapeños — you’ll never want to go back to the plain version again.

Ingredients

chicken breast, skinless and boneless, 2 lbs

chicken broth, 48 fl oz

cilantro, small bunch

garlic, 6 cloves
-
jalapeños, 3
-
limes, 1
-
onion, 1
-
tomatoes, 5
-
salt 1/2 salt
-
cumin 1/2 tsp
-
pepper 1/4 tsp

olive oil, 2 tablespoons
How To Make

Chop vegetables (jalapeños, tomatoes, onions) into small pieces.

Mince garlic

Add onion to olive oil in saucepan on medium high heat. Cook until translucent.

Add garlic to onions and cook 1 additional minute.

Add tomatoes and jalapenos

Slice chicken
-
Pour broth into pot… place stove on boil.

Add cumin, salt, pepper to the broth.

Carefully place chicken into the liquid and bring to a boil. Cook for 9-10 minutes.

Remove chicken and transfer onto a plate. Shred or dice into small pieces.

Chop cilantro, slice avocado into small pieces.

Slice limes for garnish.

Serve hot in a bowl with fresh avocado, fresh lime and fresh cilantro adorning the top.
